OMG. This Sweet Potato, Black Bean & Avocado Wrap is unbelievably yummy. It is so good, that I promise you, you will not need to snack til your next meal.
I love the mix of textures in each bite. It is smooth, soft and creamy and it is full of fibre and B vitamins. Added to that there’s a little bit of fiery chilli and peppery rocket to complete this wrap fest.
This is way more filling than your average salad wrap. In fact this little divine, mouth watering lunch is a bit of a powerhouse of vitamins and minerals.
Black beans are little pellet bombs of goodness. They are great for keeping you regular, if you know what I mean. Black beans are:
- high in protein
- keep you feeling full
- keep you energised
If you don’t include black beans regularly in your diet then these wraps are a fabulous way of sneaking them in.
Avocado is probably in my Top 5 preferred healthy foods. I have half an avocado most days of the week as they provide amazing health benefits.
- packed with healthy fats and other compounds that are naturally anti-inflammatory
- have been shown to reduce the risk of many cancers, including cancers of the mouth, skin and prostate
- the high fat and protein levels help you feel fuller for longer
In my opinion, this wrap is best prepared as soon as the sweet potato is taken out of the oven. I just love a freshly made warm wrap such as this but of course it can be prepared in the morning or even the night before and taken to work for a super nourishing lunch.
What’s great is the leftovers from the baked potato, tin of black beans and sweet corn and the rest of the avocado can all be refrigerated until the next day when you can enjoy again.
No fancy pants ingredients either, just your average store bought necessities rolled into a sausage of scrumptiousness.
Too many carbs?
If you would like a wrap lower in carbs then replace the wrap itself with a cabbage leave – still tastes amazing but remember, all the carbs in this lunch are complex carbs so THEY DO YOU GOOD and give you GOOD ENERGY.
