However, I couldn’t abandon this meal idea because it’s great for when you just don’t fancy a big hearty dinner. Sometimes, all you fancy is something light but still filling and nutritious.
Warm kale and quinoa salad fills this brief nicely. It’s squeaky clean, and will keep you feeling as fit as a fiddle for hours.
Good for you
When you see a vegetable as leafy and as green as kale, you can be certain it is going to contain an abundance of goodness.
Kale is loaded with anti-oxidants and is a great source of carotenoids and other beauties such as calcium and vitamin K.
Quinoa, is high in protein and fibre. Pine nuts contain generous amounts of vitamin E and K both of which have a positive effect on your cardiovascular system and vitamin E is especially good for your skin.
I try to eat kale and quinoa as often as possible and munching down on this dish means I can combine 2 ‘super foods’ at the same time. BONUS!
The dish is crunchy, flavoursome and the pineapple gives it a fruity, sweet kick – which I love in salads.
